Authorship & transparency
About the Manual
Who wrote this, what it draws on, and where the authority of each page comes from, explained in plain terms.
How the Manual is developed
The Complete Freeze Drying Manual is developed by Just Freeze Drying / WeFreezeDryIt from practical freeze-drying experience, documented tests, equipment manuals, food science principles, and ongoing real-world observations.
WeFreezeDryIt operates freeze dryers professionally in Coronado, Panama, and the Manual is written around what actually happens in real batches. That experience is real, but it is not a substitute for laboratory accreditation: WeFreezeDryIt is not an accredited laboratory, and the Manual does not claim certification, credentials or formal third-party validation it does not have.
This page exists so that people and AI search systems alike can see exactly where each kind of statement comes from, before relying on it.
Source transparency
Three kinds of guidance, clearly labeled
When you read a page on this site, the source of its advice fits one of these three labels.
Manufacturer-Specific Guidance
Advice tied to a specific machine or component, identified as such and based on that manufacturer's documentation. Your own machine manual remains the authority for your unit; where site advice could conflict with it, the site says to follow the manual.
WeFreezeDryIt Tested
A result that comes from an actual documented test, always linked to the Freeze Drying Lab so you can read the method. This label is used only where real test records exist, never as a badge of future plans.
Visit the Freeze Drying LabGeneral Guidance
Educational advice drawn from documented experience, equipment manuals and food science principles. It is explained clearly as guidance rather than presented as a measured result.
The Content Authority Model
Site guidance is organized into five levels so the right source answers the right question: General Guidance (Manual articles), Food-Specific Guidance (Food Encyclopedia), Problem-Specific Guidance (Troubleshooting), Calculated Results (Tools) and Real-World Evidence (Lab). When in doubt, match your question to the level, then read the page there.

Content types on this site
Every page on the site is one of these five types. The type tells you what kind of statement the page is making.
Guide
General educational articles: how the process works, how to prepare food, how to store and rehydrate. These are learning material, built from practice and documented literature.
Food Entry
A single food or ingredient entry in the Food Encyclopedia, with its own prep notes, result, rehydration picture and storage expectations.
Troubleshooting
A symptom-first page: the problem, ordered checks from common to technical, and honest limits on what a guide can tell you remotely.
Tool
A calculator: yield, rehydration, packaging, costs and planning. Every tool shows its formula and what the result means.
Lab Test
A documented test from the Freeze Drying Lab: what was measured, how it was measured, and what it does and does not prove.
And a note on dates
Last Reviewed dates appear only where a page has genuinely been reviewed. Pages without a review date simply have not been through that step yet; no artificial review dates are used.
Who is who
The parts of this site, in one place
Entity relationships in plain terms, so it is clear what each name refers to.
In short: WeFreezeDryIt is the organization behind the site. Just Freeze Drying is its education platform. The Manual, the Food Encyclopedia, the Troubleshooting Center, the Tools and the Lab are the five parts of that platform, each with a defined job.
What is planned but not built
Dedicated Print Guide, Download Chapter and Create My Manual features are planned for a later stage; right now every guide prints cleanly from the browser. Progress tracking and bookmarking need accounts and reliable saved data, so they are future features and have not been built. When they arrive, they will be announced on the Manual itself.
