FSMA and preventive controls

FSMA moved the emphasis from responding to contamination toward preventing it: facilities design food-safety systems around hazards rather than reacting after the fact. Preventive controls are the written system some facilities must maintain; whether yours must depends on the current scope and exemptions.

Current Good Manufacturing Practices (CGMP)

CGMPs are the baseline practices FDA expects of food facilities: personnel hygiene, plant sanitation, equipment, water, and process controls. They overlap with the food-safety good practice you will find on the rest of this site, but as legal requirements they are federal rules that apply where the current FDA definitions say they apply.
