Loading the Trays
The way you load your trays shapes the whole batch. Even, conservative loading gives you an even, predictable cycle. Careless loading is one of the most common sources of beginner frustration.
Load similar sizes together
Food dries at the speed of its thickest piece. Keep pieces of similar size and thickness together, and sort them so each tray is as consistent as you can make it.
Avoid overloading
Too much food in the chamber makes the cycle run longer and dries unevenly. The machine needs room for moisture to escape from every piece. Load conservatively: it is better to run two well-loaded batches than one overcrowded one.
Give moisture room to escape
Leave space between pieces and avoid piling food into deep mounds. Flat, single layers with a little breathing room dry faster and more evenly than tall piles.
Keep strong odors away from mild foods
Onion, garlic, fish and strong spices release aromas during the process. Do not mix them with mild fruits, desserts or delicate foods in the same batch unless you want onion-flavored strawberries. It is surprising how easily aroma transfers.
Do not mix very different foods in one batch
Foods with very different moisture, thickness, density or fat content dry at different rates. When you want predictable results, keep one batch to one food, or to foods that are genuinely similar. Experiment with mixed batches later, once you know how each food behaves.
