Freeze-Dried Eggs

Freeze-dried eggs rebuild into scrambled egg breakfasts, baking ingredients and prepared breakfast mixes. One rule holds everywhere: freeze drying does not make raw eggs safe to eat without cooking, so any egg application must be finished by cooking, and water amounts here are starting estimates, not tested ratios.

Scrambled eggs

Rehydrate freeze-dried cooked scrambled eggs with hot water, then finish them in a pan until hot and cooked through. Rehydration alone is not enough: they must be cooked before eating.

Baking

Egg powder blends into the dry ingredients of cakes, pancakes and batters, with liquid restored gradually. It does not whip like fresh egg whites, so expect texture differences and adjust per recipe.

Breakfast mixes

Pre-portion dried scrambled eggs or egg powder with seasonings into a breakfast pouch or jar that becomes a hot breakfast with water and a pan.

Powdered egg use

Ground egg powder is a shelf-stable ingredient for baking, batters and breakfast mixes. Keep it sealed and scoop with a dry spoon; moisture ruins the powder.
