Meat, Added Directly to Soup

The simplest way to use freeze-dried meat: add it directly to a simmering soup, stew or sauce and let the dish's own liquid rehydrate it.

Preparation

  1. Add the freeze-dried meat directly to the simmering dish a few minutes before it finishes.
  2. Stir so the pieces are submerged and rehydrate evenly.
  3. Check a piece before serving: it should be tender, not crunchy in the center.
  4. If the dish absorbs the liquid quickly, add a little extra water or broth.

All water amounts on this page are starting estimates, not tested ratios. Add liquid gradually, stir or rest, and adjust to the texture you want.

  • The rule: the recipe must contain enough available liquid. Soups, stews, curries and sauces qualify; dry or barely-moist dishes do not.
  • For very dry meat or large pieces, soak briefly in warm broth first.

Serving

About 20 to 30 g per serving, adjusted to the dish.

Storage

Store the freeze-dried meat sealed, cool and dark, and only add as much as you will serve.
