Why Is My Food Cold in the Middle?

A cold center usually means remaining ice or moisture inside the food, which means drying is not complete. Check the thickest and densest pieces, and check food from more than one tray before you decide anything.
What This Usually Means
The outside of the pieces looks dry, but the middle is cold, soft or icy. Ice at the center means the drying phase has not finished for those pieces, even if the timer or the machine says the cycle is done.
Check These First
Work through these before anything else. Most problems are found here, and every check is safe to do.
- The thickest piece in the batch: if anything is still cold, it will be that one.
- The densest food: thick meat, dense fruit or packed purée holds moisture longest.
- More than one tray: drying can be uneven between trays.
- Whether the food was pre-frozen before the cycle.
- Whether the cycle completed normally, including the final dry phase.
Likely Causes
Possible causes include, ordered from the simple and common to the more technical.
- 1 Thick or dense pieces that hold ice at the center longest.
- 2 Overloaded trays that dried unevenly.
- 3 Very different foods mixed in one batch, drying at different rates.
- 4 The cycle ended before the final dry phase fully finished.
- 5 Food that was not completely frozen when the drying phase started.
What to Do
- 1 Return the batch for more dry time, and recheck the thickest pieces afterward.
- 2 For future batches, cut thinner and more uniformly, load conservatively, and do not mix very different foods in one batch.
What Not to Do
- Do not package partially dried food, even if the outside looks fine.
When to Stop
If food is consistently cold or wet at the center after a proper full cycle with correct preparation, contact the manufacturer, a qualified technician, or a service provider.
Stop immediately if you notice any of these:
- Visible electrical issues such as sparks, arcing, or exposed wiring.
- A burning smell from the machine or the pump.
- Unusual grinding sounds or smoke from the machine or the pump.
