Fruit Powder

Fruit powder is the most popular home and commercial powder: low-fat fruit grinds fine, keeps intense flavor, and sweetens smoothies, baking, sauces and drinks. This page follows the powder template, and its most honest lesson is that not all fruit powders behave the same, so each fruit gets its own notes.

Best Starting Material

Fully dry, brittle fruit, preferably low in fat and moderate in sugar. Mango, guava and similar tropical fruit are classic; very sugary or oily fruit grinds less cleanly and absorbs humidity faster.

Preparation

  1. Start from fruit that snaps when you break it; anything flexible still holds moisture and will gum the grinder.
  2. Small fruit pieces or purée sheets both work; purée sheets crush even more easily than slices.
  3. Work in small batches so the grinder stays cool and the powder keeps its color and aroma.

Grinding

Grind with short pulses in small batches, pausing so the blades do not heat the powder. Stop when the texture is fine and uniform, then let the dust settle before opening.

Sifting

Pass the ground powder through a fine mesh strainer, return the coarse bits to the grinder for one more short pulse, and repeat until the powder is consistent.

Storage

Fruit powder absorbs humidity faster than almost anything else in the pantry: package it promptly, store it sealed, cool and dark, and open the jar only with a dry spoon.

Uses

  • Mix dry into smoothies, yogurt bowls, frostings, batters and oatmeal.
  • Whisk gradually into drinks, sauces, glazes and dressings; add it a teaspoon at a time to avoid clumps.
  • Use a pinch as a natural color and flavor enhancer in desserts and fruit salads.

Limitations

Fruit powder is a flavor and color ingredient, not a fresh-fruit substitute: it adds no juice, body or pectin. Very sweet fruits clump more, and high-fat fruits keep for a shorter window, so each fruit needs its own storage plan.
