Herb Powder
Herb powder is the most delicate and the most intense powder in the center: a tiny amount carries huge flavor, and a moment of humidity ruins it. This page teaches the powder template with humidity protection as the governing rule, because dried herbs and their powders absorb moisture faster than almost anything else.
Best Starting Material
Fully dry, crisp herb leaves with strong aroma. Basil, oregano and cilantro freeze dry well when they are completely dry and brittle; any flexible leaf still holds moisture.
Preparation
- Dry herbs completely before grinding; slightly damp leaves clump and lose aroma.
- Strip leaves from thick stems so the grinder processes leaf, not stem.
- Grind only what you will use in the near term: herb powder does not keep as long as whole dried leaves.
Grinding
Grind in short pulses in small batches. Stop the moment the powder is fine; over-grinding heats the powder and drives off aroma.
Sifting
Sift through a fine mesh strainer; herb powder is light and dusty, so work carefully and let the dust settle before opening the grinder.
Storage
Humidity protection is the lesson: seal the jar tightly, store it cool and dark, use a completely dry spoon, and never hold it over steam or an open pot.
Uses
- Sprinkle powder over finished dishes for instant herb flavor.
- Stir into soups, sauces and stews near the end of cooking so the aroma survives.
- Build herb seasoning blends for rubs, marinades and rice.
Limitations
Herb powder loses aroma faster than whole leaves and clumps when any moisture reaches it. It is a finishing and seasoning ingredient, not a substitute for fresh herb volume in recipes.
