Meal Powder
Meal powder is a freeze-dried complete dish ground fine, so a spoonful becomes instant soup, gravy or a rehydrated bowl when liquid is added. It is the most convenient powder and the most demanding to make well, because consistency, fat and moisture all compound during the process.
Best Starting Material
A fully dry, well-balanced cooked meal with modest fat and no creamy or oily layers. Soups, chilis and stews that dried completely and crumble cleanly are the best candidates; fatty or creamy meals leave greasy, clumping powder.
Preparation
- Cook the meal the way you normally would, then freeze dry it completely end to end.
- Confirm every region is brittle, breaking the dried meal into pieces, not just powdering the surface.
- Remove any fatty bits or skin before grinding so the powder stays clean.
Grinding
Grind in small batches with short pulses; meal powder blends several textures, so expect a coarser, less uniform powder than single-ingredient fruit or herb powder.
Sifting
Sift through a medium-fine strainer and re-grind coarse bits. A completely uniform powder is not required for soup and gravy use, but it keeps the result predictable.
Storage
Because meals contain meat or dairy traces and some fat, meal powder is among the shorter-keeping powders: seal promptly, store cool and dark, label with contents and date, and rotate it earliest.
Uses
- Stir into hot water for an instant soup or broth cup.
- Whisk into water or stock as a quick gravy or sauce base.
- Rehydrate with water into a soft bowl and adjust seasoning, as with the complete-meal recipes.
Limitations
Meal powder rehydrates into a soft, porridge-like dish, not the original meal texture. It keeps only as well as its oiliest component, so fatty meals are a poor powder choice, and no shelf-life claim is made here.
