Ingredients
- Freeze-dried mixed vegetables (for example peas, corn, carrot, celery)
- Freeze-dried onion or onion powder
- Seasoning (salt, pepper, dried herbs)
- Optional: freeze-dried broth or stock powder

Preparation
- Combine the dry vegetables, seasonings and any broth powder in a sealed jar.
- Label the jar with the contents, approximate water needed and the date.
- At serving time, add hot water gradually, stirring.
- Let the soup rest so the vegetables rehydrate evenly, then taste and adjust seasoning or add a little more water.

The dry mix keeps like any freeze-dried food: sealed, cool, dark and dry. Once hot water is added it becomes a perishable soup and should be consumed promptly.
