- • Hot water, added at cooking time
- • Optional fresh onion or garlic to sauté
Preparation
- Combine the dry ingredients in a pot.
- Add hot water gradually and stir well.
- Simmer gently, stirring, until the meat and beans are tender and the chili thickens.
- Taste and adjust seasoning; a little tomato powder helps rebuild body.

- Chili holds liquid well, so slight overestimating is forgiving: simmering reduces it to the right thickness.
- Stir frequently in the simmering stage so the tomato powder does not stick.

Storage
Seal the dry mix away from humidity. Rehydrated chili is perishable: serve hot and refrigerate leftovers promptly.
