Preparation

  1. Choose fruit that is fully dry and brittle; low-fat fruit like mango or guava powders more easily than sticky or oily fruit.
  2. Grind small batches with short pulses so the powder does not warm up or clump.
  3. Sift through a fine strainer and re-grind any coarse bits.

All water amounts on this page are starting estimates, not tested ratios. Add liquid gradually, stir or rest, and adjust to the texture you want.

  • Fruit powder is stirred into foods dry. In liquids, add it gradually and whisk to avoid clumps.
  • A splash of warm liquid dissolves powder into a concentrated fruit paste for sauces or glazes.

Serving

Start with a teaspoon per serving and taste before adding more.

Storage

Different fruits absorb humidity at different rates. Seal promptly, store cool and dark, and label each powder with the fruit and batch date.

Notes

Not all fruit powders behave the same: high-sugar fruit powders clump more easily, and fatty fruit powders keep for a shorter window. Treat each fruit on its own terms.
