Preparation
- Start with fully dry mango: pieces that snap cleanly, or purée sheets that crack. Slightly soft pieces will gum up the grinder.
- Work in small batches so the grinder does not heat the powder.
- Grind to a fine powder, pause, and let the dust settle before opening the grinder.
- Sift through a fine mesh strainer. Return larger bits for a second short pass.

- Mango powder is a dry ingredient: mix it into smoothies, yogurt, sauces or batters without rehydrating it first.
- If you want to dissolve it in liquid for a drink or sauce, add it gradually and stir; mango's natural sugar can clump when added all at once.
Serving
Use 1 to 2 teaspoons per smoothie or yogurt serving and adjust to taste.
Storage
Package promptly after grinding: powder has a large surface area and pulls moisture from humid air. Store sealed, cool and dark, and keep the lid closed between uses.

Notes
Mango powder is hygroscopic, meaning it absorbs moisture easily. In humid weather, package it quickly and reseal the container immediately after each use.
