Freeze-Dried Fruit

Freeze-dried fruit is the most versatile entry point in the Applications Center: it snacks, sweetens cereal and yogurt, powders for baking and drinks, and rehydrates into sauces and desserts. This page maps the common uses and links each one to the recipe or guide that shows the method.

Snacks

Fully dry fruit slices and cubes eaten crisp from the jar, the lunchbox or the trail bag. Keep pieces sealed so sugar does not pull moisture from humid air.

Cereal

Crisp fruit pieces and fruit powder add flavor to hot and cold cereal. Add them at the bowl, not the box, so the rest of the cereal stays crisp.

Yogurt

Crumbled fruit on yogurt softens gently in the bowl or stays crisp on top, and fruit powders stir into an instant fruit yogurt. Keep fruit separate until serving.

Smoothie mixes

Pre-portion dried fruit into a smoothie mix you blend with liquid any morning, or grind it into powder for instant smoothie flavor.

Powders

Low-fat, fully dry fruit grinds into fine, intensely flavored powder for baking, drinks, sauces and seasoning. Not all fruits powder alike: sugar and fat change the result.

Baking

Powder for flavor and color, pieces for texture, rehydrated fruit for moisture. Powders absorb moisture and cannot always replace fresh fruit 1:1, so adjust liquid.

Desserts

Crisp pieces as decoration and texture, powder to flavor and color frostings and creams, and rehydrated fruit in fruit salads and parfaits.

Drink flavoring

Whisk fruit powder into drinks and lemonades gradually (sugar clumps when added all at once), or blend pieces into smoothies.

Garnishes

Tiny crisp pieces or a dusting of powder brighten cakes, puddings, oatmeal and yogurt bowls. Keep garnish fruit ultra-dry so it stays attractive.

Fruit Powder Notes

Mango powder, strawberry powder, raspberry, pineapple, banana and guava powders each behave differently: sugar content drives clumping, fat shortens storage, and low-fat fruits grind the finest. Never assume one fruit powder behaves like another. The powder center and the individual powder recipes carry the food-specific notes.
